WFMW – Quick, Delicious Appetizer

Since several people enjoyed the recipes for the shrimp casserole and the salad, here’s my favorite appetizer.

Be forewarned that this dish contains the Southern Triumverate of butter, mayonnaise, and sharp cheddar cheese, and also be forewarned that if you’re going to try to make it less of a threat to your arteries by using low-fat mayonnaise and whatnot, the result will most likely be, as my mama would say, “not fittin’ to eat.”

Go big or go home. That’s all I’m sayin’. :-)

Vidalia Onion Dipmodified from Come On In
3 or 4 large Vidalia onions (any sweet onion will do)
2 Tbs. butter
1 tsp. Tabasco sauce or 1/4 tsp. ground red pepper
1/4 tsp. garlic powder
1 cup mayonnaise
2 cups sharp cheddar cheese, grated

Saute’ onions in butter until they cry uncle (in other words, until they’re completely soft). Add Tabasco and garlic powder as onions are cooking. Once the onions are transparent, combine them with remaining ingredients and bake in a buttered casserole dish at 375 for 25 minutes.

Serve with tortilla chips or crackers.

And here’s another tip: salt and pepper your favorite fresh fish filet. Put about 3 tablespoons of this dip on top of each piece of fish. Squeeze lemon juice over all. Bake as you normally would – and the dip will make the fish so moist and tender that you won’t believe it. The dip will also rob the fish of any redeeming nutritional value, so it’s a win / win for all!

  16. Sounds very good! I usually try to cook healthy for my family, but when we have guests, nurtrition goes out the window! I’ll have to try this next time we have company.

  17. As an proud, card-carrying onion lover, this is definitely a keeper for the recipe box. And no, I do NOT carry gum, either. I want to taste those onions until the next time I brush my teeth! Onion lovers unite!

  18. Oh how I love onions, especially Vidalias. And sauteed, oh me oh my. The aroma!
    My husband loves them too, but in the last couple of years whenever he eats them they just stick with him for days. Any suggestions????

    I really don’t think the “stick with” factor is as bad with sweet onions like Vidalias – and if you cook them down really good, that seems to help, too. At least I tell myself that to make myself feel better. :-)

  26. Anything southern my husband would love–the more cheese the better. Except he doesn’t like Mayonaise, unless it is hidden in something, like my homemade Ranch dressing, so your recipe sounds perfect:) Thanks for the recipe–and you have a very nice blog!

  31. I lived in Atlanta for a year and fell in love with Vidalia onions! I even had a Vidalia onion cheese dip recipe once, but I lost it. Your recipe sounds HEAVENLY! I’m going to try it! I just saw some Vidalia onions in my local grocery store this week!

  32. I have that cookbook and love it! It’s from our Junior League. But, I’ve never made that dip – too many hip-hugging calories for me! I’ve made other things in there though, and they’ve all been delicious :)
