WFMW – Quick, Delicious Appetizer

Since several people enjoyed the recipes for the shrimp casserole and the salad, here’s my favorite appetizer.

Be forewarned that this dish contains the Southern Triumverate of butter, mayonnaise, and sharp cheddar cheese, and also be forewarned that if you’re going to try to make it less of a threat to your arteries by using low-fat mayonnaise and whatnot, the result will most likely be, as my mama would say, “not fittin’ to eat.”

Go big or go home. That’s all I’m sayin’. :-)

Vidalia Onion Dipmodified from Come On In
3 or 4 large Vidalia onions (any sweet onion will do)
2 Tbs. butter
1 tsp. Tabasco sauce or 1/4 tsp. ground red pepper
1/4 tsp. garlic powder
1 cup mayonnaise
2 cups sharp cheddar cheese, grated

Saute’ onions in butter until they cry uncle (in other words, until they’re completely soft). Add Tabasco and garlic powder as onions are cooking. Once the onions are transparent, combine them with remaining ingredients and bake in a buttered casserole dish at 375 for 25 minutes.

Serve with tortilla chips or crackers.

And here’s another tip: salt and pepper your favorite fresh fish filet. Put about 3 tablespoons of this dip on top of each piece of fish. Squeeze lemon juice over all. Bake as you normally would – and the dip will make the fish so moist and tender that you won’t believe it. The dip will also rob the fish of any redeeming nutritional value, so it’s a win / win for all!

Enjoy, everybody.

  2. Yum! Yum! My mouth is watering!! Yes, have enjoyed this little piece of heaven in Boo’s home and it is heart stopping — literally!!:)

  3. that sounds good!

  4. Oh man I love vidallia onions!!!that sounds wonderful!!!!

love it – “go big or go home” hehe

  5. Yum, sounds yummy. I’m going to put it in my journal for later :)

  6. ….love that, go big or go home…
And yes, I love this dip, too. Who wants to make it less threatening???? yummy…..

  7. Love onions and dip so this sounds like heaven. Does it have to be specifically vidalias?

  8. I love it as a dip. No thanks on the fish thing. I don’t eat anything that swims! I will have to give this dip a try for sure though!!

  9. This one sounds wonderful. I will be making it very soon.

  10. O, Yummo!!! I can just see those ingredients bubbling in the dish! And you know I LOVE the southern triumvirate of ingredients. (Low-fat mayo??? what’s the point?)

  11. That sounds yum!! Can I make it for breakfast? I’m starved!!

  12. Yum!! Can’t wait to try it.

  13. AHHHHHHHHHHH!! You’re makin’ me CRAZY! Can I have that with my bagel this morning? Most definitely making. it. tonight!

  14. And onions–yum onions! I forgot about the shrimp casserole, but I was going to try that one, and I’m going to have to come up with an excuse to prepare the bubbly cheesy fatty onion dip, too.

  15. Hahaha. You do have a way of presenting a recipe, girl. And any GRITS knows you fry those onions till they cry uncle.

This sounds really good actually. Even sounds good on the fish. I need to go check out your recipes.

  16. Sounds very good! I usually try to cook healthy for my family, but when we have guests, nurtrition goes out the window! I’ll have to try this next time we have company.

  17. As an proud, card-carrying onion lover, this is definitely a keeper for the recipe box. And no, I do NOT carry gum, either. I want to taste those onions until the next time I brush my teeth! Onion lovers unite!

  18. Oh how I love onions, especially Vidalias. And sauteed, oh me oh my. The aroma!
My husband loves them too, but in the last couple of years whenever he eats them they just stick with him for days. Any suggestions????

I really don’t think the “stick with” factor is as bad with sweet onions like Vidalias – and if you cook them down really good, that seems to help, too. At least I tell myself that to make myself feel better. :-)

  19. Ok, so this is off the topic, but where is the home tour post? I’ve read so many blogs that mention it, but I can’t find where it actually is.

If you click on the button at the top of my sidebar – the one that says “Tour of Homes” – it’ll take you straight to the post. :-)

  20. Mmmm….sounds great! You’ve given me an idea for my next WFMW…thanks! I have some great receipes I can share.

Our WFMW and WW is up! :-)

  21. I think my arteries cloged reading that. :)

  22. about the home tour…

OOOOOOhhhhh. And see, you tried to make it as easy as possible for people to find it and there are still retards who can’t figure it out. Thanks! :-)

  23. OOOH. That sounds great! Thanks!

  24. mmmm…sounds delicious! Love Vidalia onions!! And, uh, they make low fat mayo?? ~~lol~~ j/k

  25. Mayo, Tabasco and Vi-DAY-a onions all together. Sounds good to me.

  26. Anything southern my husband would love–the more cheese the better. Except he doesn’t like Mayonaise, unless it is hidden in something, like my homemade Ranch dressing, so your recipe sounds perfect:) Thanks for the recipe–and you have a very nice blog!

  27. Mmmm, yummy! I like it! Think I’ll GO BIG!

  28. I’m wondering how many points (WW) are in this, likely I dont want to know. Just eat it, take a walk and chalk up the leftover calories (left on my rear that is) as worth it.

  29. I do love that you can even make me laugh with a recipe! And the shrimp casserole was great! Such a well-rounded blogger, you are:)

  30. Your recipe sounds wonderful. I love vidalia onions. And we eat a lot of grilled fish.

    I’ll be trying it soon.

  31. I lived in Atlanta for a year and fell in love with Vidalia onions! I even had a Vidalia onion cheese dip recipe once, but I lost it. Your recipe sounds HEAVENLY! I’m going to try it! I just saw some Vidalia onions in my local grocery store this week!

I posted a href=””>WFMW (alternate use for a pot rack) tip as well. Stop by and take a peek, if you haven’t already! :)

  32. I have that cookbook and love it! It’s from our Junior League. But, I’ve never made that dip – too many hip-hugging calories for me! I’ve made other things in there though, and they’ve all been delicious :)

  33. This sounds really yummy, thanks for sharing! :)
