DipTacular 2012

Now I am well aware that there may not be very many of us who participate in Ye Olde DipTacular this year, primarily because I gave y’all approximately, oh, four minutes to get recipes together. But I decided that I’d go ahead and put up the post and link because the truth of the matter is that any new dip recipe has the potential to bring sunshine and joy into our lives. And if we happen to find five or maybe even ten new recipes, then that is just gravy. Or an extra cup of grated cheese goodness, as it were.

My favorite new-to-me dip is one that I mentioned here recently. It’s called Swiss Almond Dip, and it’s about sixteen kinds of delicious.

Swiss Almond Dip
from my next door neighbor

1 (8 ounce) package cream cheese, softened
1/3 cup mayonnaise
3 green onions, chopped
1 pinch ground black pepper
1 pinch ground nutmeg
8 ounces shredded Swiss cheese
1/4 cup sliced almonds

Preheat oven to 350 degrees. In a food processor, combine the cream cheese, mayonnaise, Swiss cheese, pepper, and the extremely optional nutmeg. Gently stir in chopped green onions. Transfer to small ovenproof glass dish. Sprinkle 1/2 of the almonds on top. Bake for 7 minutes. Stir, and bake for an additional 8 minutes. Sprinkle remaining almonds on top, and serve.

Blue Cheese Avocado Dip
from Come On In

2 tablespoons chopped onion
2 avocados, peeled and pitted
1 1/2 teaspoons fresh lemon juice
1 1/2 cups sour cream
1/2 cup blue cheese, crumbled
salt and pepper to taste

Combine onion, avocados, and lemon juice in food processor. Blend with sour cream, cheese, salt, and pepper. Chill 1 hour. Season to taste and serve with tortilla chips or crackers.

There are also a couple of dip recipes that I cannot wait to try. I found them on Pinterest, and they look absolutely delicious.

  13. I don’t have a blog, but I do have 2 dips I would like to share! I hope it is OK that I post them in the comments. *I usually serve both of these with Fritos.
    Chili Cheese Dip:
    1 pkg cream cheese, 1 can no-bean chili, shredded cheddar cheese
    Spread cream cheese on bottom of pie plate, then layer chili on top, and finish with the shredded cheddar. Bake at 350 unitl hot and bubbly.
    Taco Dip:
    1 pkg reduced fat cream cheese, 1 pkt taco seasoning, 1 jar salsa, shredded lettuce, diced tomato, shredded cheddar. Mix cream cheese with taco season and spread on large plate, top with salsa, then the lettuce, tomato and cheese.

  14. Seeing as how it’s Friday night and we are all planted in front of the TV watching the first of many, oh-thank-you-Lord, MANY games o’ football, you can imagine how it thrills my soul (taste buds, too) to browse through the dips.

  15. Don’t have a blog – but as promised, here’s my MeMaw’s FAMOUS, DIVINE, ABSOLUTELY TO DIE FOR – Four Cheese Pimiento Cheese recipe.
    Four Cheese Pimiento Cheese
    *We eat this like a dip more often than making sandwiches out of it.
    1 3oz pkg. cream cheese – softened
    8oz. extra sharp cheddar cheese – shredded (2 cups)
    8oz. extra sharp white cheddar cheese – shredded (2 cups)
    4oz. Gruyere cheese, shredded (1 cup)
    1 cup mayonnaise
    1 4oz. or 2 2oz. jars diced pimientos, drained
    ½ cup finely chopped green sweet pepper
    1/3 cup finely chopped onion
    1 small jalapeno pepper, stemmed, seeded & minced (I wear gloves to do this)
    1 Tbsp. Worcestershire sauce
    ¼ tsp. cayenne pepper
    Optional: stir in – crumbled crisp cooked bacon, toasted pecans, chopped green onions, or diced tomatoes. (we’ve done each of these separately and all at the same time – DIVINE any way you do it!)
    Dippers: celery sticks, carrot sticks, pita chips, and/or crackers
    In bowl beat cream cheese 30 seconds. Gradually beat in other cheeses. Beat in mayonnaise. Stir in pimientos, sweet pepper, onion, jalapeno, Worcestershire, and cayenne. Add chosen stir ins (if any) or divide the pimiento cheese into portions and add a different stir in to each. Serve with dippers. Makes 5 cups. Recipe can be halved. Eat, enjoy, die from the ecstasy of it all…

  19. This isn’t a dip, but since it has cream cheese, I’m thinking Sophie will let it sneak in the Diptacular! I made these for a Sunday School party last night and then made a few more for football watching today.

    Take Fritos Scoops and spread the scoop part with cream cheese. Top each filled scoop with a candied jalapeno slice. That’s it.

    The candied jalapenos should be with the pickles in your grocery store. Some times they are labeled sweet-hot. I used Trappy’s.

    These need to be made very near serving time; the Fritos have a tendency to get a little soggy as they sit.
