i just had to comment to let you know i have seriously not stopped thinking about that daggum’ coconut cake since i saw your post about it. its haunting my dreams…taunting me to make it and eat it all myself. it’s times like this i need a sponser (like AA) that i can call for support!
I think about the cake, too. Not everyone around here likes coconut. That would mean more for me, of course, which is a powerful incentive to give it a whirl. Your daddy sounds like mine. Gotta love ’em.

What is it about southern men and coconut cake! It’s always been my dad’s favorite cake too but I shudder to think what it would look like if I made him one and mailed it to him. There just aren’t enough pushpins in all the world. :-)

I am a baking elitist (meaning if I ever had the gumption to bake, I would only do it the right way) so just maybe this Seattle girl might fit in. ;)

By the way, I always love your titles. I, being a good southern lady myself use phrases like “sweet merciful heavens” quite often. The favorite here is oh-lawsy-mercy (not to be confused with Lord of Mercy…that would be sacrilege).
I can just imagine him staring at the computer screen asking himself “what do I write in this subject line?” and your parents having a whole conversation back and forth about it. Ha ha! Makes me laugh!

Well, thanks to your overwhelming power of suggestion, I’m up to my third cake this week. I baked three and gave two away — no I didn’t eat them all myself. I must confess, however, that though they are beautiful double layer lemon cakes, Betty Crocker made the mix I just dumped it in a bowl and went from there. Still pretty tasty though!

I’m a little late responding and reading. You know I’ve been all sad, crying and depressed because somehow our Dawgs found their way right out of the CWS. When I asked my son today how our (Houston!) Rice Owls did, his response was, “did in what, the CWS is over as far as I’m concerned”. A true bulldog at heart. So I’m posting to say that these sweet words of your mom via your daddy made me smile like no other. My parents are gone, so make and document those memories every day so your little guy will know just how special and precious they were when he is a grown up.
