In our family, we like eggs. We like eggs a lot. So when BlogHer asked me if I’d be willing to share some recipes I love to make with Eggland’s Best eggs, I stood up and raised my hand and then I saluted.
Okay. So maybe not literally.
But I was tickled to participate, mainly because Eggland’s Best is a product I’ve used regularly for the last couple of years. Since we have a growing boy in this house, I’ve tried to be careful not to buy food with added hormones and antibiotics, and Eggland’s Best has neither. Plus, since stuff like eggs and milk and meat and fresh vegetables are staples of our diet, I don’t mind paying a little extra to buy a better quality product. It’s taken me a long time to learn the lesson, but really good ingredients make for better-tasting meals, and better-tasting meals mean that the people in this family don’t mind leftovers quite so much. Since I’m the one doing the cooking, that’s a win-win for me.
So. The recipes.

A couple of nights ago I was craving something chocolate-y LIKE NOBODY’S BUSINESS, AS IS MY INALIENABLE RIGHT AS AN AMERICAN, and since I had all the stuff for fudge pie on hand, I had no choice but to make one. This is a super-simple, very rich pie, and the great thing about it is that a little goes a long way. Just a tiny sliver of this pie will satisfy the most intense chocolate craving, and it tastes so delicious that your family and friends will love you forever for making it. The eggs are key, of course, because without them we’d have a lovely chocolate soup.
Fudge Pie
3/4 cup sugar
3 tablespoons cocoa powder
1/2 stick butter, melted
2 well-beaten eggs
1 small can evaporated milk
2 teaspoons pure vanilla extract
Preheat oven to 350. Mix all ingredients, making sure to thoroughly combine the dry ingredients before adding the butter, eggs, milk and vanilla extract. Pour mixture into a pie shell, and bake for 35-40 minutes. When you remove the pie from the oven, it will still be a little jiggly. Let stand for 15-20 minutes before cutting. Serve with vanilla ice cream.

My husband’s favorite pie in the whole wide world is egg custard pie, and when I told him I was going to be making three recipes with eggs, he said something along the lines of “OOOOH! OOOOH! EGG CUSTARD PIE!” It’s something I rarely make because I’m a big believer that desserts should feature chocolate, but since I had some purty, fresh eggs to use, I humored him and made my mother-in-law’s recipe. He was so grateful.
Egg Custard Pie
2 cups whole milk (skim or nonfat milk won’t work nearly as well)
6 eggs
dash of salt
1 cup sugar
1 teaspoon vanilla
Preheat oven to 350. Mix all ingredients, then pour into a pie shell. Bake for 45 minutes or until set. Let cool before serving.

This last recipe is so simple, and I’ve probably made it fifty times for special occasion breakfasts (whether we have company, or I’m cooking for something at church, or we’re celebrating a holiday). What I love most about it is that you can make it the night before and put it in the refrigerator, so when you wake up the next morning, all you have to do is throw it in the oven and wait on the deliciousness.
It’s a keeper.
Crescent Roll Breakfast Casserole
1 12 oz. package bacon, chopped and fried (reserve about 2 Tbs. of bacon grease)
2 packages fresh sliced mushrooms
2 packages crescent rolls
8 large eggs, beaten
2 cups evaporated milk
2 cups milk
2 cups shredded Swiss cheese
Cook bacon pieces. Drain on paper towels. In reserved bacon grease, saute’ mushrooms until they lose their firmness (about 8 minutes). While mushrooms are cooking, press crescent roll dough in the bottom of a large (around 10 x 13), greased casserole dish, making sure that you press all the seams together. Depending on the size of your casserole dish, you may have a little bit of dough left over.
In a separate bowl, combine eggs, evaporated milk, milk, and cheese. Set aside.
Scatter bacon and mushrooms on top of the crescent roll dough. Pour egg / milk / cheese mixture on top.
Bake 15 minutes on 325 degrees, then 35-40 minutes on 300 degrees.

I LOVE eggs! My day wouldn’t be complete without them! I start each morning with an egg white omelette, and I make it with two real egg whites…fresh from the eggs. I save the yolks for other things.
To mix it up, I’ll add a little cheese and some spinach or mushrooms.
Another favorite with eggs is cornbread. Yummy Yummy Yummy!
Without a doubt, and I think my family would agree with me, it is jello cake!

The first is the egg, cheese and english muffin sandwich for breakfast. The second, and where most of our eggs have been going lately, is chocolate chip cookies.

We love eggs in my house!! I’ve seen this recipe already mentioned but it’s my kids favorite breakfast – breakfast burritos! Scrambled eggs and cheese with bacon or sausage on a tortilla. This is something that they will actually eat ALL of and clean their plates!

We lived on a farm for a year and a half. We had chickens. I taught my then four year old how to make scrambled eggs…on the stovetop, not in the microwave! (The lesson came immediately after we’d gathered some eggs, some were still warm!) So, my favorite egg dish is watching my Aidan making himself some scrambled eggs.
I love to bake and anything I bake usually includes eggs. But my kids love scrambled eggs so we go through lots of them in our weekly breakfast for dinner!

We love eggs!! In this economy eggs make a great (and inexpenxive) meal! I personally love a fried egg sandwich. My kids love hard boiled eggs, which they call “pago eggs” . Not a clue why! :0)
We love eggs at our house and probably my favorite recipe is a spinach quiche I make with eggs. It is really yummy!!

My current favorite recipe is for LEMON BARS. There are four eggs in the lemon custardy middle layer. Yum!
My mom makes breakfast casserole, a little like your recipe, for Christmas every year. I love it!
(Except this past year, she didn’t stir it very well, and I ate a bite that included about 1 teaspoon of mustard powder. Yuck!)
Oh gosh, we eat tons of eggs…so I don’t have a favorite egg meal…but, I would have to say I use the most eggs in my cake hobby :) I started decorating cakes a little over a year ago and I probably use 4 dozen egglands best a month!! (you can click on my name and see my cake blog :) )

Eggs for dinner have become our new comfort food…. followed by more comfort food made with eggs….cake (my personal favorite!)
Brownie batter! Notice I said batter and not just brownies. I enjoy the batter and then my family gets to enjoys whatever is left when I make it into brownies. Yum!

My favorite “egg” dish to make is Easy Garden Bake. It is great for both breakfast or dinner and packed full of all kinds of good veggies. The recipe calls for onions, tomatoes, and zucchini- but I also add mushrooms, bell pepers, and sometimes spinach- Oh. So. Yummy!
Eggs are a vital part of my family’s diet! We use them by the carton!

We make something called Pearl Soup…it involves eggs and beef consume and cream and tapioca beads…it’s a family recipe and we love it!

eggs are cheap = one of this grad student’s favorite ingredients. love strata with spicy sausage and lots of cheese. but my very favorite egg dish is scrambled eggs made by my mom. she uses lots of butter! tastes like home.
We are on a low carb diet so I use eggs a ton!! I love to make pizza crust using moz cheese, egg and parm cheese. Bake and let it set over night and it really does taste like pizza crust.

We eat a lot of Eggsland eggs around here! With three young girls in the family, I always buy food without hormones – Eggsland fits that bill. Our favorite egg recipe is a Pepper Jack crustless quiche. Yum!
Fried eggs, sunny side up, with yolk that is just beginning to thicken, hot all the way through, and white that is just cooked without a hint of firmness. Cooked in a pan with olive oil and melted butter. With white toast to dip in the yolk on the plate. There is nothing better to eat. Nothing.

I love eggs, and I almost always buy Egglands Best too. Fave ways to use ’em? Too many to list – so I’ll just say pumpkin pie, which is what I’m going to make today :)

Husband’s favorite is “Egg In A Frame”, where you cut a hole out of a slice of bread and fry your egg inside.
I love making Egg Casserole (NOT quiche, mind you, because real men don’t eat quiche at my house). The recipe is a little different every time, depending on what I have on hand, but green chilies and cheddar are a favorite combination.

I have several favorite’s but the one that just popped in my head was the baked french toast I make for Christmas morning. It uses 8 eggs. I make it the night before and it bakes while we open presents. I made it this fall and my 10 yo walked in the kitchen and said “It smells like Christmas”

That’s a tough question! There are so many delicious things that can be made with eggs. I love breakfast though and scrambled with some cheese, over easy with some toast or in a yummy breakfast casserole are all winners in my book.

I use Eggland’s best eggs as well and I can tell a difference and really love them! I am partial to a really good poached egg with buttered toast on the side in the morning…but I make a mean breakfast casserole and I bake a lot, so we go through the eggs like crazy!

I’m not real big on eggs in their natural state, but if you want to use them to make a cake, or corn casserole, or a quiche then that would be lovely. I have learned to boil up about a dozen at the beginning of the week, and eat one with my yogurt and granola – it has a lot of staying power.
I just love a good ‘ol breakfast burrito! Eggs, cheese, salsa, some ham or sausage if I have it on hand.
