In our family, we like eggs. We like eggs a lot. So when BlogHer asked me if I’d be willing to share some recipes I love to make with Eggland’s Best eggs, I stood up and raised my hand and then I saluted.
Okay. So maybe not literally.
But I was tickled to participate, mainly because Eggland’s Best is a product I’ve used regularly for the last couple of years. Since we have a growing boy in this house, I’ve tried to be careful not to buy food with added hormones and antibiotics, and Eggland’s Best has neither. Plus, since stuff like eggs and milk and meat and fresh vegetables are staples of our diet, I don’t mind paying a little extra to buy a better quality product. It’s taken me a long time to learn the lesson, but really good ingredients make for better-tasting meals, and better-tasting meals mean that the people in this family don’t mind leftovers quite so much. Since I’m the one doing the cooking, that’s a win-win for me.
So. The recipes.

A couple of nights ago I was craving something chocolate-y LIKE NOBODY’S BUSINESS, AS IS MY INALIENABLE RIGHT AS AN AMERICAN, and since I had all the stuff for fudge pie on hand, I had no choice but to make one. This is a super-simple, very rich pie, and the great thing about it is that a little goes a long way. Just a tiny sliver of this pie will satisfy the most intense chocolate craving, and it tastes so delicious that your family and friends will love you forever for making it. The eggs are key, of course, because without them we’d have a lovely chocolate soup.
Fudge Pie
3/4 cup sugar
3 tablespoons cocoa powder
1/2 stick butter, melted
2 well-beaten eggs
1 small can evaporated milk
2 teaspoons pure vanilla extract
Preheat oven to 350. Mix all ingredients, making sure to thoroughly combine the dry ingredients before adding the butter, eggs, milk and vanilla extract. Pour mixture into a pie shell, and bake for 35-40 minutes. When you remove the pie from the oven, it will still be a little jiggly. Let stand for 15-20 minutes before cutting. Serve with vanilla ice cream.

My husband’s favorite pie in the whole wide world is egg custard pie, and when I told him I was going to be making three recipes with eggs, he said something along the lines of “OOOOH! OOOOH! EGG CUSTARD PIE!” It’s something I rarely make because I’m a big believer that desserts should feature chocolate, but since I had some purty, fresh eggs to use, I humored him and made my mother-in-law’s recipe. He was so grateful.
Egg Custard Pie
2 cups whole milk (skim or nonfat milk won’t work nearly as well)
6 eggs
dash of salt
1 cup sugar
1 teaspoon vanilla
Preheat oven to 350. Mix all ingredients, then pour into a pie shell. Bake for 45 minutes or until set. Let cool before serving.

This last recipe is so simple, and I’ve probably made it fifty times for special occasion breakfasts (whether we have company, or I’m cooking for something at church, or we’re celebrating a holiday). What I love most about it is that you can make it the night before and put it in the refrigerator, so when you wake up the next morning, all you have to do is throw it in the oven and wait on the deliciousness.
It’s a keeper.
Crescent Roll Breakfast Casserole
1 12 oz. package bacon, chopped and fried (reserve about 2 Tbs. of bacon grease)
2 packages fresh sliced mushrooms
2 packages crescent rolls
8 large eggs, beaten
2 cups evaporated milk
2 cups milk
2 cups shredded Swiss cheese
Cook bacon pieces. Drain on paper towels. In reserved bacon grease, saute’ mushrooms until they lose their firmness (about 8 minutes). While mushrooms are cooking, press crescent roll dough in the bottom of a large (around 10 x 13), greased casserole dish, making sure that you press all the seams together. Depending on the size of your casserole dish, you may have a little bit of dough left over.
In a separate bowl, combine eggs, evaporated milk, milk, and cheese. Set aside.
Scatter bacon and mushrooms on top of the crescent roll dough. Pour egg / milk / cheese mixture on top.
Bake 15 minutes on 325 degrees, then 35-40 minutes on 300 degrees.

Potato Salad! It isn’t good until you add the eggs. It’s my favorite part of the salad!! And for that reason, I put in a lot of eggs in my salad.
I love to make coconut buttermilk pie!
I like to make cupcakes! Eating a bunch of smaller cakes is much more satisfying than just having one piece of cake, right?

I know it is not something spectacular but my favorite thing to make is a yummy fried egg sandwich!! YUM. My husband makes the best ones. And he melts the cheese on there for me and puts Miracle Whip on the toast!! :) LOVE IT!
We use A LOT of eggs. But I would have to say my favorite thing that uses eggs is just your standard choc. chip cookies. If there is anything that breaks a diet for me…it’s those darn cookies!

FRENCH SCRAMBLED EGGS! Which is basically just eggs, a tiny bit of milk and lots of BUTTER cooked over a double boiler. The double boiler is the key! They are so delicious!!!!
You’re right the possibilities are endless….but I have to say I love my breakfast foods and most everything that is breakfast related has eggs. Plain eggs, omlets, pancakes, waffles, and french toast are just a few of my favs.
I love to make Spaghetti Carbonara! I also love to bake, so cookies and cakes too.
We do omelets a lot (breakfast for dinner). My one year old LOVES scrambled eggs with cheese-and I can sneak in veggies, too!

We are such an ‘eggy’ family! Love them fried, scrambled, dh makes an awesome frittata, and of course – breakfast tacos.

I probably use eggs the most for chocolate chip cookies, but I also love a good boiled egg for an afternoon snack.
We love, love, love to make a big homemade breakfast with eggs made to order, hashbrowns and biscuits from scratch, and a variety of breakfast meats (because, really, who can choose just one?). While we generally only make this time-intensive meal on holidays or for dinner occasionally, it’s a family favorite and I hope my little one will have great memories of them… :-)

Quiche! I make two or three for one meal and it fills up my hungry family of nine. So many different ways it can be made, but always delicious!
I love to make my son breakfast wraps with eggs and either turkey bacon or sausage. I also love to make baked goods, like my world-famous loaded brownies.
Omlettes are the favorite around here but nothing makes me happier than cracking an Eggland’s Best egg for chocolate chip cookies. I buy the brown, free-range eggs.

Had one poached this morning. Since my heart attack in June I only buy Egglands organic or freerange eggs.
An endless stream of cookies and cakes, but one of my favorite things is a scrambled egg sandwich, with a thin film of mayonnaise on two extremly fresh slices of white bread. Southern, yes.

My husband loves an egg omelet with spinach, mushroom and onions. . He inhales one every morning.
I use Egglands all the time. My favorite recipe is what I call a wrecked omlette with Jenny-O turkey sausage patties ctumbled, hashbrowns (the frozen cubes with onions and peppers), 6-8 eggs and cheese. Yummm.
Egg custard pie. My mom always made that when the cupboard was getting empty. We always had eggs and she always made her own crust. It was a simple and quick weeknight dessert that we loved to eat just as soon as it was cool enough. Great memories.

I know it’s boring, but I love omelets!!! There are so many different combos, but my favorites are ham, cheese & onions or California (cheese, onions, peppers & avocado)!
We absolutely love plain old egg salad! We rarely eat it in sandwiches–just dip it up on potato chips!!

I’m all about the frittata. I keep eggs and frozen asparagus or broccoli on hand for that purpose. I prefer it with asparagus, grated swiss and cubed ham, but it’s good with just about any cheese/veggie/meat combo. YUM!

A spinach omelette
My friend’s French great-aunt taught me how to make scrambled eggs so that they’re nice and mushy and delectable and don’t have the consistency of styrafoam packing peanuts. I love to make them with spinach, feta and tomatoes (even if the green does make them look a bit like snot. Small sacrifice).
We go through eggs like nobody’s business around here lately – it’s one of the few things I can trick (i mean entice) my daughter to eat . . . she’s picky-and i have no clue where she gets that from! for real, cause me and her daddy will eat anything!
but i love eggs in a toast. You know, when you cut a little hole in the middle of the toast, pour in an egg and then fry it up? i love that. I’m not sure what it’s called, but i love it.
