In our family, we like eggs. We like eggs a lot. So when BlogHer asked me if I’d be willing to share some recipes I love to make with Eggland’s Best eggs, I stood up and raised my hand and then I saluted.
Okay. So maybe not literally.
But I was tickled to participate, mainly because Eggland’s Best is a product I’ve used regularly for the last couple of years. Since we have a growing boy in this house, I’ve tried to be careful not to buy food with added hormones and antibiotics, and Eggland’s Best has neither. Plus, since stuff like eggs and milk and meat and fresh vegetables are staples of our diet, I don’t mind paying a little extra to buy a better quality product. It’s taken me a long time to learn the lesson, but really good ingredients make for better-tasting meals, and better-tasting meals mean that the people in this family don’t mind leftovers quite so much. Since I’m the one doing the cooking, that’s a win-win for me.
So. The recipes.

A couple of nights ago I was craving something chocolate-y LIKE NOBODY’S BUSINESS, AS IS MY INALIENABLE RIGHT AS AN AMERICAN, and since I had all the stuff for fudge pie on hand, I had no choice but to make one. This is a super-simple, very rich pie, and the great thing about it is that a little goes a long way. Just a tiny sliver of this pie will satisfy the most intense chocolate craving, and it tastes so delicious that your family and friends will love you forever for making it. The eggs are key, of course, because without them we’d have a lovely chocolate soup.
Fudge Pie
3/4 cup sugar
3 tablespoons cocoa powder
1/2 stick butter, melted
2 well-beaten eggs
1 small can evaporated milk
2 teaspoons pure vanilla extract
Preheat oven to 350. Mix all ingredients, making sure to thoroughly combine the dry ingredients before adding the butter, eggs, milk and vanilla extract. Pour mixture into a pie shell, and bake for 35-40 minutes. When you remove the pie from the oven, it will still be a little jiggly. Let stand for 15-20 minutes before cutting. Serve with vanilla ice cream.

My husband’s favorite pie in the whole wide world is egg custard pie, and when I told him I was going to be making three recipes with eggs, he said something along the lines of “OOOOH! OOOOH! EGG CUSTARD PIE!” It’s something I rarely make because I’m a big believer that desserts should feature chocolate, but since I had some purty, fresh eggs to use, I humored him and made my mother-in-law’s recipe. He was so grateful.
Egg Custard Pie
2 cups whole milk (skim or nonfat milk won’t work nearly as well)
6 eggs
dash of salt
1 cup sugar
1 teaspoon vanilla
Preheat oven to 350. Mix all ingredients, then pour into a pie shell. Bake for 45 minutes or until set. Let cool before serving.

This last recipe is so simple, and I’ve probably made it fifty times for special occasion breakfasts (whether we have company, or I’m cooking for something at church, or we’re celebrating a holiday). What I love most about it is that you can make it the night before and put it in the refrigerator, so when you wake up the next morning, all you have to do is throw it in the oven and wait on the deliciousness.
It’s a keeper.
Crescent Roll Breakfast Casserole
1 12 oz. package bacon, chopped and fried (reserve about 2 Tbs. of bacon grease)
2 packages fresh sliced mushrooms
2 packages crescent rolls
8 large eggs, beaten
2 cups evaporated milk
2 cups milk
2 cups shredded Swiss cheese
Cook bacon pieces. Drain on paper towels. In reserved bacon grease, saute’ mushrooms until they lose their firmness (about 8 minutes). While mushrooms are cooking, press crescent roll dough in the bottom of a large (around 10 x 13), greased casserole dish, making sure that you press all the seams together. Depending on the size of your casserole dish, you may have a little bit of dough left over.
In a separate bowl, combine eggs, evaporated milk, milk, and cheese. Set aside.
Scatter bacon and mushrooms on top of the crescent roll dough. Pour egg / milk / cheese mixture on top.
Bake 15 minutes on 325 degrees, then 35-40 minutes on 300 degrees.

Sausage Egg & Grit Casserole – Yum!
My 6 year old’s favorite is scrambles eggs with cheese, but the rest of the faamily prefers homemade waffles made on my Mickey Mouse waffle iron! Can’t beat it, and for variety we throw in chocolate chips!

How do I pick a favorite? For now, I guess it would be lemon or lime curd; it’s delicious!
We eat a frittata at least once a week. Great way to use up leftover bits of veggies and meat, and everyone loves it!

I was craving a breakfast burrito this morning: flour tortilla, scrambled egg, bits of sausage, and cheese. YUM!
My kids love scrambled eggs.. it is one of the few healthy things that they will eat.

Well your casserole sounds awsome, but really there are so many foods I love with eggs, cakes, pancakes, or just plain sunny side up eggs, there are so many opetions.

Omelettes. Julie Childs taught me how to make the perfect omelette and now I can’t stop making them.
Omlets. Ham, mushrooms, tomatoes, cheese. Delish.
I love scrambling egss with some Tapatio sauce for a little kick. Then I heat corn tortillas, add some cheddar and the eggs, and sprinkle fresh cilantro on top. We have this as a special weekend breakfast. It’s yummy and pretty light. Delicious!
I frequently make eggs for dinner, especilly ham and cheese omlets.
Simply put .. I like to make omelettes. Omelettes, omelettes, omeletts w/ eggs. Sometimes w/ veggies, sometimes w/ potatoes, sometimes w/ country ham.

We eat them as a breakfast food a lot, but I love to bake and use a LOT of eggs when I do…Cake, cookies, pies, etc.
We LOVE Eggland’s Best!!!! My husband has them every morning for breakfast. I love to bake, and my mom’s banana nut bread is the best… (it’s a family secret, so I can’t share, but it is YUMMMMM!!).
I have a wonderful sugar cookie recipe that reminds me of cookies I used to buy at a great bakery in Durham, NC. It calls for one egg…which means I always try to have them on hand in case the urge to make these yummy cookies hits.
Homemade chocolate chip cookies. Simple but so delicious. :)
I like eggs with ham or bacon in it, especially when I have a head cold, like I did this weekend. My husband made it for me. YUM!

My favorite food to bake with eggs is Hershey’s Cocoa Chocolate cake. Delicious! Breakfast casserole is a favorite also.

I love scrambled eggs with spinach, onion and swiss cheese. Mmmmmm. And child #3 asks for plain scrambled eggs at least 3 times a week, including for bedtime snacks! :)
Mine is simple: scrambled eggs BUT u add some onion flakes (while eggs are still runny) along with the usual salt n pepper and it tastes great! Try it you, will be surprised.

I don’t know if you can really call it a “recipe” but our most recent favorite around here is to spray the inside of a coffee mug with some cooking spray and crack an egg into it and beat lightly. Zap it the in the microwave for about a minute (or until the egg rises above the rim of the cup…that’s the fun part to watch!). Then plop it onto a toasted English muffin, add cheese & Canadian bacon and it’s the perfect Egg McMuffin!

this might be the hardest question i have ever had to answer for a contest. the things i make with eggs are so varied. i am going to choose french toast!

We love eggs! My son went through an egg phase at age 2. He
ate scrambled eggs for dinner every night for a good, solid 3 months!!
We love omelettes. I love breakfast casserole for company. I make one with hashbrowns instead of bread because the hubs “can’t stand wet bread.”
And, of course, any baked good containing eggs. And sugar.
Lots of recipes I love require eggs, but one of my favorite, super-easy main-dish ones is Sausage/Cheese Quiche. Works great for b’fast or a dinner entree’. Whenever I take this anywhere, I’m always asked for the recipe!
Scrambled eggs with cheese is one of my very favorite comfort foods… especially when my husband makes it for me!

3 whites and 1 yolk, scrambled. With cheese. Always with cheese. That, and chocolate chip cookies.

Breakfast burritos!! My son eats one every morning and I only use eggland best eggs. My brother in law raises chickens and he can not believe I won’t use his eggs over store bought!!!

My husband and I discovered Egglands Best several years ago and they are the best! I never would have thought you could taste the difference but you can! My favorite thing to make with Egglands is just scrambled eggs with mushrooms, bell peppers, spinach, cheese, and bacon all stirred in! Yummy!

Ghirardelli Double Chocolate Brownies.
I love making my mom’s egg bake. We started having it when I was younger on Easter to use up the hard boiled eggs. Since she died when my oldest was a baby, I have continued the tradition.
I like scrambled eggs with leftover taco meat from last nights dinner and some shredded Mexican blend cheese mixed in until it’s all melty and smelling wonderful. If there is fresh salsa in the house, I might add some of that too.
Although my 2 yr old requests “eggs with hot sauce” every morning, our favorite is “Egg Casserole”:
Roll out a can of crescent rolls in the bottom of a greased 9×13 dish.
Spread brown, crumble maple sausage over crescent layer.
Pour mixture of eggs, milk and salt and pepper (5-9 eggs & 1/2 cup or so milk… however much you like).
Sprinkle shredded cheese over top… about a cup or 2.
Bake at 400 for abt 20 minutes. Do the giggle test.
YUM!
That’s a toughie. I use eggs all the time. My favorite way to use them (even though it isn’t often enough) is Banana Pudding with homemade custard (not instant pudding, no ma’am) So much better!
I would make the breakfast cassserole that my good friend April shared with me recently. It is a keeper recipe for sure!

There is nothing better than a good ole’ fashion fried egg sandwhich!!!! Toast the bread, a little mayo, slice of cheese and that hot fried egg placed right on top!!
I think I like eggs pretty much any way I’ve had them, but “Grandpa’s Eggs” are definitely in the top 5. He cracked the eggs and mixed them up really well and then poured them into a frying pan with lots of bacon fat. (I never claimed this was a healthy way to eat eggs). He let them cook without too much stirring so they were big chunks and then he sprinkled bacon over them before serving. Yum. Takes me back.
Parmesan chicken. Just dip drumsticks in egg then coat with grated parmesan and a touch of seasoning.

I LOVE fried eggs. When I was little my dad would make me a fried egg on Satuday morning. Man, it was so good. I make them for myself now but they are no where near as ggod as the ones he made me.
