When it comes to orange-flavored breakfast foods, I’m a decided fan.
Orange rolls with cream cheese icing? Sure.
Orange scones with cranberries? Yes, please.
Orange banana smoothie? Oh, I believe I will.
So when I saw a recipe for orange muffins on allrecipes.com, I knew that I had to try them. And I may or may not have baked them around 9:00 at night so that I could, um, sample them before I served them to my family for breakfast the next morning.
I am just that selfless, people.
Here’s the recipe:
Orange Muffins
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup white sugar
1 tablespoon grated orange zest
2/3 cup orange juice (I used Tropicana, of course)
1/2 cup melted butter
2 eggs
1/2 cup ground walnuts (optional)
1 tablespoon melted butter
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
Combine flour, baking powder, baking soda, salt, white sugar and grated orange peel. Stir in orange juice, 1/2 cup melted butter, eggs and chopped nuts.
Pour into 12 muffin cups.
Blend 1 tablespoon melted margarine, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Serve hot.
You’ll be happy to know that I took a picture of all the assembled ingredients. It was a momentous occasion, the making of the new muffin recipe, and I felt that it should be preserved for posterity.

I left out the orange zest because, well, I didn’t have an orange on hand. I also added about a teaspoon of pure vanilla extract – just because I love it.
Anyway, I mixed everything together, poured the batter in the muffin cups, and 25 minutes later, here’s what was waiting for me.

And when I cut open the muffins, here’s what that delicious brown sugar / butter / cinnamon mixture had done.

YES MA’AM.
Then, to enhance the orange flavor just a smidge, I mixed together 1/4 cup of powdered sugar, 2 tablespoons of Tropicana orange juice and 1 tablespoon half and half. I heated the mixture over low heat until the powdered sugar was dissolved, then poured about a teaspoon on top of each muffin (I poked holes in the muffins with a fork beforehand).
Let me just tell you: that whole making-a-glaze thing was a very good decision indeed.
The muffins were very tasty – almost cupcake-like in their consistency – and they were so easy to make. I’ll definitely use this recipe again.

My favorite item for breakfast is sausage breakfast cassorole! So yummy!
Even though I eat oatmeal with pecans every morning, my favorite breakfast is a buffet where I can sample three or four or twenty types of foods. Yum!
I recently tried a steel cut oatmeal with fruit compote recipe that was REALLY good. And you can freeze the leftovers in single servings. Love. Perhaps next time I should add some OJ for a little extra flavor kick…
My all-time favorite breakfast food is a bacon and biscuit and orange juice. It’s been my favorite since I was a child. I err on non-sweet but sweet is always good sometimes too!
My favorite breakfast food is Cap’n Crunch french toast with whipped cream and berries that my husband makes. But I’m a breakfast lover, so quiche, bacon, eggs, biscuits, toast, BRING IT ON! Can’t wait to try these muffins!
I have a protein drink each morning, but wish it was a cinnamon muffin or a cinnamon roll!

If you ask my mom what my favorite breakfast food is she would say french toast sticks with powdered sugar on top and cocktail smokies. But now that I’m a grown up, I’ve moved on to more sophisticated breakfast foods such as waffles topped with strawberries and whipped cream and gigantic plate full of bacon.
I love to make a smoothie for breakfast. I use Carnation Instant Breakfast (chocolate), milk, a spoonful of peanut butter, and 1/2 a banana. YUMMY! And it keeps me full until lunch so that’s a bonus! The muffins sound delicious. I’ll have to try those soon!

I eat egg whites for breakfast every day. 3 egg whites with some cheese on them and 2 slices of wheat toast. Thrilling I know! You know what would make that even better? Well, BACON, of course!
I love all kinds of baked goods, especially scones. i definitely drift towards the “sweet” side of things, but breakfast is a favorite meal at our house, so we always eat all kinds of breakfast foods!

I really like waffles with lots of syrup, no butter! But I’d have to say my favorite has to be a ham, cheese and onion omelet!
I tend to get in ruts. Right now I alternate between Pepperidge Farm’s cinnamon swirl bread, lightly toasted, and a bowl of cereal with blueberries.
I am definitely a fan of the cinnamon rolls! And orange rolls. And french toast. And cinnamon toast. And cheese toast. And pancakes, waffles, and grits. Oh, and I can’t forget the bacon! Basically, I just like breakfast food. It’s just too bad I can’t make myself get out of bed to make it/eat it.
My favorite breakfast food is at dinnertime! Any of the traditional favorites will do… pancakes and bacon, biscuits and sausage gravy… yum.

My favorite breakfast is my hubby’s omelets. I always need something sweet with it, so will try those muffins next time. Add some sliced fruit, grits, oj and coffee. Nothing better!!!!

I usually tend to crave savory in the morning but lately I have been really enjoying homemade banana chocolate chip pancakes or fresh blueberry pancakes! Yummm! And those orange muffins sound delicious.
Mine is smoothie-of-the-day. I keep frozen fruit in the freezer and just pick out what floats my boat on that day. Thanks for the contest.

My favorite COOKED breakfast is pancakes, but my most OFTEN favorite is the good old stand by–cereal and milk! Always good, always ready. :)

My absolute favorite is baked french toast. You prepare it the night before and just pop it into the oven in the morning.

I definitely don’t want anything sweet for breakfast. Sugar that early in the morning usually triggers food cravings all day long. I can get by on a toasted buttered english muffin with a slice or two of crispy bacon and I’m set until lunch.
I made breakfast for lunch today and made omelets with chopped ham, red bell pepper, tomatoes, and shredded cheese. Yummy!

I love special K red Berries Cereal. I eat it for breakfast, dinner and sometimes for snacks!

BA-GEL enough said. I don’t care what flavor bagel or cream cheese as long as it savory and not sweet. Because strawberry, blueberry, etc cream cheese is just gross.
I love sweet and savory breakfast foods anytime of day. I love to eat warm, moist pancakes; muffins; danishes; donuts; cinnamon rolls; omelettes; biscuits; bacon; eggs; etc….my mouth is watering just thinking about it all!

I love this concoction my hubby makes. He cubes and fries organic baby red potatoes in EVOO until they are lightly browned/crispy. He then places them on top of an open-faced organic brown 3 egg omelet and tops the whole pile with hand-shredded organic sharp cheddar cheese! It huge and usually last thru lunch but man is it good!!
My favorite breakfast item is an omelette with veggies, I err on the side of savory.
