When it comes to orange-flavored breakfast foods, I’m a decided fan.
Orange rolls with cream cheese icing? Sure.
Orange scones with cranberries? Yes, please.
Orange banana smoothie? Oh, I believe I will.
So when I saw a recipe for orange muffins on allrecipes.com, I knew that I had to try them. And I may or may not have baked them around 9:00 at night so that I could, um, sample them before I served them to my family for breakfast the next morning.
I am just that selfless, people.
Here’s the recipe:
Orange Muffins
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup white sugar
1 tablespoon grated orange zest
2/3 cup orange juice (I used Tropicana, of course)
1/2 cup melted butter
2 eggs
1/2 cup ground walnuts (optional)
1 tablespoon melted butter
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
Combine flour, baking powder, baking soda, salt, white sugar and grated orange peel. Stir in orange juice, 1/2 cup melted butter, eggs and chopped nuts.
Pour into 12 muffin cups.
Blend 1 tablespoon melted margarine, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. Serve hot.
You’ll be happy to know that I took a picture of all the assembled ingredients. It was a momentous occasion, the making of the new muffin recipe, and I felt that it should be preserved for posterity.

I left out the orange zest because, well, I didn’t have an orange on hand. I also added about a teaspoon of pure vanilla extract – just because I love it.
Anyway, I mixed everything together, poured the batter in the muffin cups, and 25 minutes later, here’s what was waiting for me.

And when I cut open the muffins, here’s what that delicious brown sugar / butter / cinnamon mixture had done.

YES MA’AM.
Then, to enhance the orange flavor just a smidge, I mixed together 1/4 cup of powdered sugar, 2 tablespoons of Tropicana orange juice and 1 tablespoon half and half. I heated the mixture over low heat until the powdered sugar was dissolved, then poured about a teaspoon on top of each muffin (I poked holes in the muffins with a fork beforehand).
Let me just tell you: that whole making-a-glaze thing was a very good decision indeed.
The muffins were very tasty – almost cupcake-like in their consistency – and they were so easy to make. I’ll definitely use this recipe again.

My favorite breakfast food is a slim fast shake. It is fast and full of nutrition. I love it. Chocolate is my favorite.

I love ALL breakfast foods and love having breakfast for dinner: biscuits and gravy, eggs, cinnamon rolls, cereal, bagel with cream cheese and lox. You really can’t go wrong!

I love strawberry crepes with homemade whipped creme… from the Original Pancake House in Birmingham. I didn’t want you think I made those myself!
Favorite breakfast is blueberry pancakes! Love it when the juicy berries burst in my mouth. You almost don’t need syrup!
A toasted bagel with light cream cheese, sliced tomato, salt, and cracked pepper on top. Sooo good!

I definitely lean towards savory in the breakfast department. Omelets or English Muffins with some sort of breakfast meat. Yum!

Waffles – homemade with real maple syrup. I dream about homemade waffles and eat them pretty much every weekend!

For actual breakfast I’m happiest with a bowl of cereal or a bagel. But I love breakfast for lunch or dinner, at which time I’d say French toast is the favorite. Especially a pb &j french toast.
We tend to eat more sweet than savory over here. I like it all….donuts, cinnamon rolls, pancakes, waffles….as long as it’s quick and simple, I’ll make it and eat it!
I’m all about the sweet, my hubby is all about the savory!

My favorite breakfast food is fruit topped with plain yogurt and walnuts. It is filling, nutritious, and tastes great!
French toast!
On a typical day, it’s usually something light like cereal or a piece of toast. But, when we do breakfast for dinner or I actually have time to prepare something bigger in the morning, I like bacon that’s been brushed with mustard and sprinkled with brown sugar before it’s been baked. It’s heavenly.
Truth be told, I love ALL breakfast food, but I suppose sweet is the one that wins over in the end. Like right now, blueberry muffins sound really good.
Not orange-flavored things, to be honest. But most any kind of sweet bread will do! YUM!

I recently made the Cracker Barrel one that you posted a few weeks ago.
I made it twice before starting Weight Watchers again. And twice I ate the entire pan in two days. Just me. Oh yes I did.
I love ALL breakfast foods! If I had to pick just one thing though, I may have to say Cracker Barrel’s pecan pancakes.
I love a good old fashion breakfast. Bacon, sausage, eggs, grits, toast, hashbrowns and a HUGE cup of coffee…. I am gaining weight just thinking abt it.. MMMmmmM!

If I’m preparing my own breakfast, my go-to favorite is Carnation Instant Breakfast. HA! But if someone else is cooking or I’m eating out, I love French Toast or crepes.
So I guess I tend to err on the sweet side.
I love breakfast food – omelets, eggs benedict, french toast,eggs/bacon/grits, you name it (but not all at one time). In reality, though, I usually have a SlimFast shake with a banana and my son’s leftover omelet, if I’m lucky.
