Eggland’s Best $100 Visa Gift Card Giveaway

In our family, we like eggs. We like eggs a lot. So when BlogHer asked me if I’d be willing to share some recipes I love to make with Eggland’s Best eggs, I stood up and raised my hand and then I saluted.

Okay. So maybe not literally.

But I was tickled to participate, mainly because Eggland’s Best is a product I’ve used regularly for the last couple of years. Since we have a growing boy in this house, I’ve tried to be careful not to buy food with added hormones and antibiotics, and Eggland’s Best has neither. Plus, since stuff like eggs and milk and meat and fresh vegetables are staples of our diet, I don’t mind paying a little extra to buy a better quality product. It’s taken me a long time to learn the lesson, but really good ingredients make for better-tasting meals, and better-tasting meals mean that the people in this family don’t mind leftovers quite so much. Since I’m the one doing the cooking, that’s a win-win for me.

So. The recipes.

A couple of nights ago I was craving something chocolate-y LIKE NOBODY’S BUSINESS, AS IS MY INALIENABLE RIGHT AS AN AMERICAN, and since I had all the stuff for fudge pie on hand, I had no choice but to make one. This is a super-simple, very rich pie, and the great thing about it is that a little goes a long way. Just a tiny sliver of this pie will satisfy the most intense chocolate craving, and it tastes so delicious that your family and friends will love you forever for making it. The eggs are key, of course, because without them we’d have a lovely chocolate soup.

Fudge Pie

3/4 cup sugar
3 tablespoons cocoa powder
1/2 stick butter, melted
2 well-beaten eggs
1 small can evaporated milk
2 teaspoons pure vanilla extract

Preheat oven to 350. Mix all ingredients, making sure to thoroughly combine the dry ingredients before adding the butter, eggs, milk and vanilla extract. Pour mixture into a pie shell, and bake for 35-40 minutes. When you remove the pie from the oven, it will still be a little jiggly. Let stand for 15-20 minutes before cutting. Serve with vanilla ice cream.

My husband’s favorite pie in the whole wide world is egg custard pie, and when I told him I was going to be making three recipes with eggs, he said something along the lines of “OOOOH! OOOOH! EGG CUSTARD PIE!” It’s something I rarely make because I’m a big believer that desserts should feature chocolate, but since I had some purty, fresh eggs to use, I humored him and made my mother-in-law’s recipe. He was so grateful.

Egg Custard Pie

2 cups whole milk (skim or nonfat milk won’t work nearly as well)
6 eggs
dash of salt
1 cup sugar
1 teaspoon vanilla

Preheat oven to 350. Mix all ingredients, then pour into a pie shell. Bake for 45 minutes or until set. Let cool before serving.

This last recipe is so simple, and I’ve probably made it fifty times for special occasion breakfasts (whether we have company, or I’m cooking for something at church, or we’re celebrating a holiday). What I love most about it is that you can make it the night before and put it in the refrigerator, so when you wake up the next morning, all you have to do is throw it in the oven and wait on the deliciousness.

It’s a keeper.

Crescent Roll Breakfast Casserole

1 12 oz. package bacon, chopped and fried (reserve about 2 Tbs. of bacon grease)
2 packages fresh sliced mushrooms
2 packages crescent rolls
8 large eggs, beaten
2 cups evaporated milk
2 cups milk
2 cups shredded Swiss cheese

Cook bacon pieces. Drain on paper towels. In reserved bacon grease, saute’ mushrooms until they lose their firmness (about 8 minutes). While mushrooms are cooking, press crescent roll dough in the bottom of a large (around 10 x 13), greased casserole dish, making sure that you press all the seams together. Depending on the size of your casserole dish, you may have a little bit of dough left over.

In a separate bowl, combine eggs, evaporated milk, milk, and cheese. Set aside.

Scatter bacon and mushrooms on top of the crescent roll dough. Pour egg / milk / cheese mixture on top.

Bake 15 minutes on 325 degrees, then 35-40 minutes on 300 degrees.

  3. Lemon cake with white chocolate frosting, also has lemon curd in it and I got the recipe in a magazine. It takes about 8 eggs, but is so good and this is the time of the year to be making it again.. spring is soon and Easter.. mmmmm

  4. I make lots of egg and tuna salad with hard-boiled eggs. And we eat a whole lot of scrambled eggs. I also made The Pioneer Woman’s poundcake this week which took 5 eggs. Delicious!

Eggland’s Best eggs are our family favorites – they make any recipe taste better.

  21. I make a breakfast quiche that is fabulous! I use bacon, but you can also use sausage, ham, etc. with cheese, eggs, butter (of course!).

  22. I love eggs! My family loves breakfast casserole, but my favorite (especially with fresh E.B. eggs) is just a regular fried egg. So good. Also, the egg in a basket (toad in a hole) from Pioneer Woman. The butter and toast with the egg are delicious!

    Anything with this combo pretty much makes something yummy…chocolate, flour, sugar & eggs, etc. But at the moment I’m dieting, I know, dumb & not fun. But I love to chop up boiled eggs and put them over my salads. Eggs…excellent protein.

    lunch: egg salad, tuna salad, or potato salad

  39. This is tough, since eggs are involved in most things good (much like cheese). I will have to say an omelette, since it combines both eggs and cheese!

    I love to make frittatas on the weekend. Whatever veggies I have on hand…potatoes, onions, spinach, mushrooms, whatever…if I have leftover meat like ham or sausage or bacon I throw it in too…add some cheese and you’ve got some yummy goodness!!!

    We love Egglands Best! As a newlywed I’ve enjoyed discovering that my husband likes to make scrambled eggs and these amazing egg, turkey bacon, cheese and english muffin sandwiches! Yum!

    And I ONLY use Eggland’s Best Free-Range or Organic Eggs. No seriously. Just ask my husband. He’s been known to have to run back to the grocery store to “exchange” them out. They ARE the freshest!

  49. I still make the old Sun-in-a-Window treat. Punch a hole out of a slice of bread, lay it in a hot frying pan, crack the egg into the hole, and let everything get toasty. Great comfort food!

  50. I guess one of my families favorites is a hash brown and egg casserole dish that I make sometimes for supper. It is really so easy to do..and it is a great way to use up beef or chicken leftovers.

  51. This sounds like a whole lotta cholesterol, but my wonderful (non-morning) husband eats scrambled eggs EVERY morning of the week. He likes them “fluffy.” Now isn’t that a lovely culinary term?

  52. I LOVE to make an old Pampered Chef favorite called ham puffs. Sort of like mini quiches. Awesome egg recipe.

  56. My non-egg-eating husband (gasp) made me a egg sandwich, where the egg was actually in a heart he carved out of the toast. Ain’t that cute?

  57. I can give my boys pancakes, cereal, pop-tarts or anything else for breakfast and they just nibble it…but when I make scrambled eggs (Eggland’s Best rocks!)they eat every bite!!! So that is definitely makes scrambled eggs a favorite…but for me, it has to be baking–cookies and cakes from scratch!

  58. My family’s favorite is homemade breakfast sandwiches – a toasted muffin, a scrambled egg round made in my smallest skillet, and some cheese. Sometimes, if I’m feeling daring, we like to mix it up and replace the muffin with two pancakes to make a knock-off McGriddle.

  60. I seriously love eggs–any way, shape, or form (except if it has a runny yoke…) But my favorite dish to make with eggs is a frittata, using anything in the fridge that needs to be used. And the best thing about eggs–and frittata–is that you can eat it for any meal of the day. And my favorite snack? A hard boiled egg!

    And I always use an egg when making meatloaf or burgers!

    Um, brownies, and then chocolate chip cookies, and then muffins. Oh, and my homemade dinner rolls. Probably in that order. :) We aren’t big on egg recipes with eggs as the main ingredient, but boy do we enjoy them in other things!

  72. My favorite recipe to make with eggs are simple homemade egg noodles! Simple — eggs, flour, and water with a pinch of salt!! There you have it!

  74. I’d make Broccoli Surprise – Surprise is it has no Broccoli – basically hashbrown, sausage, eggs and cheese in a skillet – usually had for dinner. Yummy
    I’d also have to make some delicious and killer homemade rolls – complete with 4 eggs. Delicious and buttery.

  82. I love to make breakfast cassersoles that you prepare the night before and bake the next morning. I have several different versions, but they all have eggs. The other ingredients vary such as bacon or sausage or hash browns, but they are all delicious!

  90. Oven Omelet –

    18 eggs
    1 c. sour cream
    1 c. milk
    2 tsp. salt
    1/3 c. butter

    Melt butter in pan in oven at 325*. Mix eggs and other stuff until frothy. Bake 30-35 minutes or until fluffy/puffy and delicious!

  92. We adore eggs around here. Just plain old scrambled eggs is such a comfort food for me. But my very favorite dish has to be the Breakfast Casserole we make for CHRISTmas morning/brunch.

    Sausage and Pepper Frittata

    10 eggs – scramble in a bowl
    1 T. olive oil
    1 red pepper, cut into small pieces
    1 medium red onion, diced
    3 pack of turkey sausage links cut into bit size chunks
    1 1/2 cups cooked hash browns
    1/3 cup chopped parsley
    1/2 teaspoon kosher salt
    1/4 teaspoon black pepper
    3 scallions diced

    INSTRUCTIONS

    In a bowl, use a wisk on eggs, parsley and 1/4 teaspoon of salt and pepper. Set aside

    In a skillet cook the pepper and onions and sausage for four minutes. Add hash browns. Season with salt and pepper.

    Pour the egg mixture over the sausage mixture and potato and cook. Stir with a spatula.

    Place the almost set mixture under the for 2 minutes. Remove from heat and after a minute run a spatula around the edge of the frittata to remove. Invert frittata. Cut into slices and serve with scallions on top.

One of my specialties is stuffed eggs, plain and simple with Miracle Whip or Mayo, a little prepared mustard, salt and pepper, with a little paprika sprinkled on top of some of them. Wherever I have ever served them people rave about them!! Yummy eggs! Egglands are wonderful, too!! Also, Texas Sheet Cake which is kinda the same ingredients as Pioneer Woman uses in her chocolate sheet cake except they are mixed together differently! Both are very good. Have a great day all!!
