In our family, we like eggs. We like eggs a lot. So when BlogHer asked me if I’d be willing to share some recipes I love to make with Eggland’s Best eggs, I stood up and raised my hand and then I saluted.
Okay. So maybe not literally.
But I was tickled to participate, mainly because Eggland’s Best is a product I’ve used regularly for the last couple of years. Since we have a growing boy in this house, I’ve tried to be careful not to buy food with added hormones and antibiotics, and Eggland’s Best has neither. Plus, since stuff like eggs and milk and meat and fresh vegetables are staples of our diet, I don’t mind paying a little extra to buy a better quality product. It’s taken me a long time to learn the lesson, but really good ingredients make for better-tasting meals, and better-tasting meals mean that the people in this family don’t mind leftovers quite so much. Since I’m the one doing the cooking, that’s a win-win for me.
So. The recipes.

A couple of nights ago I was craving something chocolate-y LIKE NOBODY’S BUSINESS, AS IS MY INALIENABLE RIGHT AS AN AMERICAN, and since I had all the stuff for fudge pie on hand, I had no choice but to make one. This is a super-simple, very rich pie, and the great thing about it is that a little goes a long way. Just a tiny sliver of this pie will satisfy the most intense chocolate craving, and it tastes so delicious that your family and friends will love you forever for making it. The eggs are key, of course, because without them we’d have a lovely chocolate soup.
Fudge Pie
3/4 cup sugar
3 tablespoons cocoa powder
1/2 stick butter, melted
2 well-beaten eggs
1 small can evaporated milk
2 teaspoons pure vanilla extract
Preheat oven to 350. Mix all ingredients, making sure to thoroughly combine the dry ingredients before adding the butter, eggs, milk and vanilla extract. Pour mixture into a pie shell, and bake for 35-40 minutes. When you remove the pie from the oven, it will still be a little jiggly. Let stand for 15-20 minutes before cutting. Serve with vanilla ice cream.

My husband’s favorite pie in the whole wide world is egg custard pie, and when I told him I was going to be making three recipes with eggs, he said something along the lines of “OOOOH! OOOOH! EGG CUSTARD PIE!” It’s something I rarely make because I’m a big believer that desserts should feature chocolate, but since I had some purty, fresh eggs to use, I humored him and made my mother-in-law’s recipe. He was so grateful.
Egg Custard Pie
2 cups whole milk (skim or nonfat milk won’t work nearly as well)
6 eggs
dash of salt
1 cup sugar
1 teaspoon vanilla
Preheat oven to 350. Mix all ingredients, then pour into a pie shell. Bake for 45 minutes or until set. Let cool before serving.

This last recipe is so simple, and I’ve probably made it fifty times for special occasion breakfasts (whether we have company, or I’m cooking for something at church, or we’re celebrating a holiday). What I love most about it is that you can make it the night before and put it in the refrigerator, so when you wake up the next morning, all you have to do is throw it in the oven and wait on the deliciousness.
It’s a keeper.
Crescent Roll Breakfast Casserole
1 12 oz. package bacon, chopped and fried (reserve about 2 Tbs. of bacon grease)
2 packages fresh sliced mushrooms
2 packages crescent rolls
8 large eggs, beaten
2 cups evaporated milk
2 cups milk
2 cups shredded Swiss cheese
Cook bacon pieces. Drain on paper towels. In reserved bacon grease, saute’ mushrooms until they lose their firmness (about 8 minutes). While mushrooms are cooking, press crescent roll dough in the bottom of a large (around 10 x 13), greased casserole dish, making sure that you press all the seams together. Depending on the size of your casserole dish, you may have a little bit of dough left over.
In a separate bowl, combine eggs, evaporated milk, milk, and cheese. Set aside.
Scatter bacon and mushrooms on top of the crescent roll dough. Pour egg / milk / cheese mixture on top.
Bake 15 minutes on 325 degrees, then 35-40 minutes on 300 degrees.

I use eggs mainly for baking since my husband doesn’t like egg yolks, and my daughter is allergic to plain eggs. She doesn’t react to them in things though, so baking we all enjoy:) My 2 faves: blueberry pancakes or chocolate pudding cookies rolled in coconut…okay, that’s really my favorite. Now I need to go make some:)

We. Love. Eggs. Seriously…we go through at least a dozen a week. We use them in so many ways. Last night, it was to make Blueberry Pancakes for dinner (I know it’s technically a breakfast food, but go with it!). But, my favorite way to eat eggs is unadulterated — simply scrambled!
Being a good Southern girl, I have to say deviled eggs…when else do I get to use that adorable plate I got for my wedding?

My favorite ‘everyday’ thing is scrambled eggs in the morning with sourdough toast and fig preserves.
For holidays I make a ‘night before’ casserole with eggs, bacon, cheese, day old sourdough bread cubes, parsley and cream. It cooks up fast in the mornings and you assemble it the night before so no messy kitchen the morning of the holiday.

I love Scrambled Eggs. Warm, fluffy Scambled Eggs. They are my go-to comfort food.
My all-time fave thing to make with eggs is egg salad. I keep it plain and simple. Hard boiled eggs, Duke’s Mayonnaise, yellow mustard, and Lawry’s seasoned salt. I could it eat every day. On sourdough toast. A little romaine lettuce and sliced tomaters. Oh. so. yummy.
Wow – it’s so hard to pick. Let me go with a nice fat omelet with lots of bell peppers, ham and cheese!
I LOVE breakfast burritos with eggs, cheese, sausage and salsa verde!!

This may sound strange…but it is delicious! I just LOVE an Egg Salad Melt. It is actually very simple. It’s the same idea as a tuna melt. You simply make a grilled cheese sandwich with an egg salad filling. Thanks!

I LOVE!!! Eggland’s Best. Started eating when I was pregnant b/c good for baby. Now I can’t eat any other eggs – these are the best. Best food? Breakfast every. single.day. My husband and I both. Two egg whites and one yolk. YUM! Also I make mean turkey meatballs and use the egg white to hold the meat/fixins together!
My favorite may be deviled eggs. Second favorite are my perfectly fried over-medium eggs. Third favorite are poached. My sons like eggs scrambled with sauteed onions. We eat eggs every day, as the Daddy is vegetarian and eggs are kind of our ‘meat’. We must go through 2 dozen a week, at least, for the 4 of us. I use double the amount called for in waffles, crepes, pancakes.
i got such a sweet tooth and “have” bake every other day :) my favorites cake ,pie and cookies :) i have to try your Egg Custard Pie next … sounds so yummy :)
Back in the 1950s when I was small, my mother used to make me a raw egg protein shake. The recipe was 8 ounces of milk, an egg, a couple teaspoons of sugar and a dash of vanilla extract and or Nestle’s Quik blended in. At some point she stopped making them, not sure why. These days, they can be safely made with Eggland’s Best Pasteurized eggs.
I love making omelets for company breakfasts because they are so easy, but look like you’ve put a lot of effort in. They are great with just a little salt and pepper, but here are some other things I’ve put in:
1.½ cup chopped, cooked chicken plus a pinch of curry and onion salt
2.2 tablespoons jelly (for this omit pepper and add 1 tablespoon sugar)
3.1 cup sautéed mushrooms plus a splash of sherry
4.½ cup grated cheese
5.3-6 crisply cooked and crumbled bacon slices
6.1 tablespoons chopped chives
7.Canned or leftover chili, shredded American cheese and chopped onion
8.Can of deviled ham, mushrooms and top with can of cream of cheddar soup
9.½ cup creamed cottage cheese and 1 teaspoon minced chives or parsley
We love Eggland’s and use them for scrammbled eggs….But with all this snow I’ve been eating my self silly with Eggland’s in my SNOW CREAM!

My favorite egg dish is definitely an omelet. Onion, tomato, ham, and mozzarella filler. Yum.
Simple scrambled eggs and/or pumpkin bread. Both are the favorites in our house.
Sadly, I am allergic to eggs… :( However, my daughters (10 & 12) love to make scrambled eggs and hard boiled eggs just to snack on!

I make this Banana Fudge Pie and use eggs in the fudge base. ITS HEAVENLY! My youngest daughter requests it for her birthday every single year! And YES, I buy Egglands Eggs too!

Flourless chocolate cake. 9, yes, NINE eggs. (along w/ a pound of butter and a pound of good chocolate and a pound of sugar and a pound of pure cream). . .
Of course, if you don’t want completely clogged arteries, my other favorite is just good old scrambled eggs . . . throw eggs in the blender with 1T of cream cheese and scramble them in a hot pan. Amazing.
In our house, nothing beats good ole fried egg sandwich. And if we are feeling fancy egg salad.
My favorite recipe is my great grandma’s crepes. She was from Sweden and therefore her Swedish Pancakes (i.e. crepes) are the best on the planet. She has sinced passed away (she lived to 104) and I make these often.
Here’s the recipe in case anyone wants it:
3 eggs
2 cups milk
1 cup flour
1/2 tsp salt
6 tbs unsalted butter (melted)…I half this to save on calories…but if you want FULL flavor use this much
Mix everything with a blender or hand mixer. It will be very soupy and you’ll think it’s not thick enough (IT IS). Do not add more flour. Then pour less than 1/4 cup on a very hot skillet and spread it around by tilting the pan (the pancakes will be VERY think…they are supposed to be). Cook for 1-2 minutes, then flip and cook for 1 minute or so.
Serve with syrup or any fancy fillings you want.
I have to say that I love eggs-with-the-bread-and-the-hole-in-the-middle. :) We call them either that or “eggs like Ms. Francis fixes.” :) They are DELISH!! It’s basically a piece of bread with a hole in the middle, and you pour an egg in that hole while it’s on the skillet, and cook! Yum! (Thanks for the great giveaway!!)

For my family, I think it’s a toss up between a breakfast casserole similar to the recipe you shared OR a scrumptious baked french toast (for me, personally, I’d totally go for the baked french toast –it’s definitely DE-lish!). I have a lot of favorite egg recipes but my most tride and true is Good Morning Egg Casserole! I bake this in a 9×13 dish and cut it into squares. I eat a square on my way to work.
12 eggs beaten
1 container of lowfat cottage cheese
1 package of frozen spinach – drained
Lots of broccoli cut into small pieces
Whatever other veggies I have in the house
1 small block of feta cheese crumbled
1 onion chopped and grilled
Optionally, I add browned sausage

Hello – I use eggs for EVERYTHING — The whole egg – none of this egg white or yellow thing! LOL I love scrambled or boiled eggs in the morning, I use eggs for lunch when I have tuna salad, chef salad – at dinner time the dinner rolls and corn bread require eggs – and for an actual meal I have to add eggs to my fried rice, asian inspirted soups, and when I batter chicken, fish, or pork. And of course I cannot forget about dessert — My cake mixes, muffins, brownies, or cookies! So my life would dramtically change without good quality eggs from Egglands Best! Thanks – ARN

Mmmmmm! Eggs! For starters, I have to say we live for ‘breakfast for supper’ nights around here. And it’s always scrambled eggs, vegetarian breakfast links, and toast. Amazingly, I go through a dozen eggs for a round of scrambled eggs. Frighteningly, none of my kids are over ten years old and they eat that much (oh, and there’s barely any leftovers for mom by the time they get full). I can only imagine how many I’ll go through when they finally hit the teen years! *shudder*
All that being said, I would have to say my favorite thing to make is something my kids have dubbed ‘Mommy Lovey Pancakes’. Really they are just gingerbread pancakes. But I like the other name so much better. :-)
