As you might expect, this led to a discussion about the vegetables and/or fruit that have risen to culinary prominence over the last several years, and I don’t know, maybe Melanie and I need some new hobbies.

I just put that book on hold at the library – I can’t wait to read it! As for radishes… Our neighbor brought the best appetizer over a couple of years ago on Christmas Eve and now we request it every year. It is a sliced, toasted baguette, very good butter, very thinly sliced radishes, and flaked sea salt. As a guest, you assemble your own serving… I know it sounds like the strangest combination of ingredients but it is so, so good. I think it would be a very “summery” appetizer or something to put on a summer charcuterie tray. The slicing them, roasting them, and then put them in the air fryer seems like a whole lot of work :/
The roasted/cooked radish thing is true! I’m not a fan of radishes. I can eat them if they’re sliced in a salad but not my favorite. A teacher friend made Olive Garden’s Zuppa Toscana and used radishes instead of potatoes (low carb recipe) and IT WAS AMAZING. I could not believe it!
