Oh My Word I Can’t Quit Eating

And this time, surprisingly, the culinary object of my obsession is not fried chicken.

It’s granola.

I KNOW!

IT’S NOT EVEN FRIED, Y’ALL!

Now I’ve made granola before, but I tend not to try new granola recipes very often since I’m the only person in this house who enjoys delicious granola goodness.

Because clearly the other two people who live here are, well, crazy. They have no idea what they’re missing.

My friend Merritt knows of my love for the granola, and today she sent me a recipe that I couldn’t wait to try. Especially because D and Alex weren’t here for supper tonight, and Alone Time is my Prime Time for eating the stuff my boys don’t like (see: sushi, eggs, guacamole).

Once I saw Merritt’s recipe (it’s from Southern Living, by the way), I ran up to Target to get a few ingredients that I was missing, not to mention a little plain vanilla yogurt to eat with the granola, because everybody knows that one tablespoon of vanilla yogurt mixed with one-quarter cup of granola is the MOST PERFECT FOOD TEXTURE IN THE UNIVERSE, and now you must excuse me for a moment, because quite frankly I need to swoon.

Anyway, I made the granola a little earlier tonight, and it is absolutely the best I’ve ever had. It’s simple, filling and oh-so-yummy.

Quick Oatmeal Granola

Preheat oven to 350, then combine the following three ingredients in a small bowl:

1/4 cup honey
2 Tbsp. melted butter
1/2 tsp. pure vanilla extract

Next, in a big bowl, combine:

1 1/2 c. uncooked regular oats
1/2 c. whole wheat flour
1/3 c. sliced almonds (Merritt and I both added more b/c we adore the almonds)
1/4 tsp. salt

Combine wet and dry ingredients. Spread onto a greased baking sheet and bake for 20 minutes, stirring often.


I actually doubled the recipe because we have company coming tomorrow, and it worked great.

And this may make you feel just a little bit sorry for me, but I cannot wait to wake up in the morning – just so I can eat more granola.

It’s shaping up to be a delightful weekend.

  2. I’ve never tried to make my own granola before since I, too, am the sole granola lover in my home. (And you’re so right, granola + vanilla yogurt = extra yummy delightfulness!) But this recipe looks so easy, I’ve just GOT to give it a try.

  5. Sounds close to the recipe I use. In the morning, we put out bowls of dried cranberries, raisins, and other dried fruits and everyone chooses their favs to add in :)

  6. It’s 1:30 in the morning, the dogs want to go out and I am forced to eat m&m’s and drink koolaid all because I have no granola to snack on. Thanks for the recipe. (although I don’t think the family would approve of baking in the middle of the night. sigh.)

  9. I love homemade granola as well and this recipe looks good. The one I make has an entire can of sweetened condensed milk. YUM!! It’s really good, but honey has to be a better-for-you sweetner than sweetened milk! I’ll give it a try.

  10. I wrote a post this week about an evil “diet food” that had me obsessed, but I didn’t name it because I didn’t want people going for it. You named it today. For me, although it’s healthy, it’s off the diet because I can’t stop once I start.

  11. We make ginormous batches of granola here.

    I do something positively evil with mine. I eat mine with………flavored coffee creamer on it. My favorite flavor is Carmel Vanilla Toffee. I do water it down just a tad, so I don’t feel like I am being to naughty though…..

  12. If you have a costco near you, they also sell (in their bakery section with the breads and desserts) the most amazing granola. It has dried cranberries in it, and is in big chunks like cookies. Ohmyword it is the only snack every single person in this house likes.

However, I am waaaaaayyyyyyyyy tooooooooooo busy (aka: lazy)to make my own, so I eat Heartland Granola (which used to be available for me at the Publix before we moved to Michigan, the cold) right out of the box. Not with milk, RIGHT OUT OF THE BOX. Yummy – ummm, where’s my box? Must have some rightthisminute! Hugs, Lisa

    I highly recommend the cinnamon. And they are very handy to keep in your purse. I may have just given you way more information than you were needing. JUST SAYIN’.

  26. LOVE me some granola. Ya know those winky dinky little fruit/yogurt parfaits from McDonalds?? Wellll….You can buy a big honkin tub of vanilla yogurt, 1 box of granola(Or use your home-made recipe) and a bag of frozen mixed berries.

    Pile all that together sweetening the berries a bit and VOILA! One big HONKIN home-made fruit/yogurt parfait and cheaper to boot! LOL

    Gonna whip up the home-made granola in just a sec cause well….I wanna :0)

  35. The BEST way to eat this granola is with yogurt and fresh strawberries/blueberries. I have a recipe almost identical to yours and I, too, add more almonds and sometimes I get crazy and add sunflower seeds. So Good! Try it with the yogurt, you won’t be disappointed. Well, unless you hate yogurt…
